Polychlorinated dibenzo-p-dioxins (PCDDs) and polychlorinated dibenzo-furans (PCDFs) are a group of ubiquitous, persistent pollutants that are highly soluble in fat. 17 of them have a significant toxicity and are very present in the environment.

Dioxins and furans are by-products of the combustion or manufacture of certain chemicals and are among the most dangerous persistent organic pollutants for human health and ecosystems.

90% of the total exposure of the population to dioxins and furans is through food, especially fatty foods such as fish, shellfish or dairy products.
